Steaks With Mushrooms, Bleu Cheese & Frizzled Shallots Recipe

Ingredients
  • 32 oz beef round tip steaks, cut 1 inch thick (four 8oz steaks) .
  • 1/2 c blue cheese, crumbled .
  • 1/4 c whipping cream .
  • 1 tbsp all-purpose flour .
  • 8 oz shiitake mushrooms, stems removed, sliced .
  • 1/4 c fresh parsley leaves, finely sliced .
  • 2 shallots, small & thinly sliced, separated into rings .
  • 2 tbsps water .
  • 4 slices bacon, thick-sliced cut into 1/2-inch pieces .
  • 1/2 tsp pepper, divided .
  • 1 tsp salt, divided

Directions
  • Step #1 Cook bacon in nonstick skillet over med-heat/flame until crisp.
  • Step #2 Remove bacon with slotted spoon to paper towels, reserving 2 to 3 tbsps drippings in skillet.
  • Step #3 Set aside.
  • Step #4 Meanwhile mix flour, 1/2 tsp salt & 1/4 tsp pepper in small bowl.
  • Step #5 Add shallots; toss to coat.
  • Step #6 Heat bacon drippings over medium-high heat until hot.
  • Step #7 Add shallots & cook 2 to 3 mins or until well browned, stirring every once in awhile.
  • Step #8 Remove from skillet with slotted spoon to paper towels.
  • Step #9 Set aside.
  • Step #10 Reduce heat to medium.
  • Step #11 Spice up beef steaks evenly with remaining 1/4 tsp pepper.
  • Step #12 Place steaks in same skillet; cook 14 to 15 mins for medium rare doneness, turning every once in awhile (do not overcook).
  • Step #13 Remove to serving platter; season this with remaining 1/2 tsp salt.
  • Step #14 Keep warm.
  • Step #15 Add mushrooms & water to skillet then cook & stir 3 to 5 mins or until mushrooms are tender.
  • Step #16 Add cream & cook 1 to 2 mins or until cream is almost absorbed.
  • Step #17 Stir in cheese & bacon.
  • Step #18 Spoon mushroom mixture over steaks & top this with shallots & parsley.
