Cheesecake In The Jar Recipe

Ingredients
  • 1/4 tsp vanilla, extact .
  • 1 tbsp lime juice .
  • 1/2 lb white grapes (seedless) .
  • 2 1/2 oz fresh cheese .
  • 1 tsp cornstarch .
  • 1 3/4 oz sugar .
  • 20 amaretti (crumbled) .
  • 5 oz fresh goat cheese .
  • Topping .
  • Cheesecake Cream .
  • White Grapes Sauce .
  • 3 tbsps water .
  • 2 1/2 oz caster sugar (siefted) .
  • 2 1/2 oz yogurt

Directions
  • Step #1 For the sauce bring 2 tbsps of water, sugar & white grapes to a boil.
  • Step #2 Cook for about 4 mins over low heat/flame.
  • Step #3 The grapes should only be soften.
  • Step #4 Remove the grapes from the liquid with a slotted spoon & set aside.
  • Step #5 Dissolve cornstarch in the remaining tbsp of water & add to liquid stirring constantly & cook this until sauce thickens (about 3 to 5 mins).
  • Step #6 Remove from heat, add vanilla extract & stir.
  • Step #7 Add the white grapes & set aside to cool completely.
  • Step #8 Make the cheesecake cream.
  • Step #9 In the food processor/blender or with handheld mixer, mix the two types of cheese & caster sugar until smooth & foamy.
  • Step #10 Add yogurt & lime juice & mix until mixd.
  • Step #11 Assembling: Divide the white grapes sauce into four glasses.
  • Step #12 Top with the cheesecake cream & top each with 5 Amaretti (crumbled).
  • Step #13 NOTE: I suggest to make the white grapes sauce 1 day in advance.
  • Step #14 Keep it in the fridge until use.
