Spaghetti Squash Divine Recipe

Ingredients
  • 3 c milk or half-and-half cream (I use 2% milk) .
  • 1 c leeks, sliced into rings (2-3 leeks) .
  • 1 tbsp margarine or butter .
  • 1/3 c all-purpose flour .
  • 2 tbsps olive oil .
  • 3 roasted garlic cloves .
  • 1 large spaghetti squash .
  • kosher salt & pepper

Directions
  • Step #1 Cut spaghetti squash in half & scoop out seeds.
  • Step #2 Place, cut side down in a baking pan.
  • Step #3 Add approximately 1 inches water to bottom of the pan & bake for 1 hr at 350 degrees.
  • Step #4 While squash is baking, sizzle the oil & margarine or butter over med-heat/flame.
  • Step #5 Mash the roasted garlic into a paste & throw it in the oil with the leeks.
  • Step #6 Saute until leeks are soft but not browned & garlic paste is incorporated, about 4 mins.
  • Step #7 Sprinkle top flour into leek mixture.
  • Step #8 Stir until absorbed, then as soon as possible add the milk all at once, stirring constantly.
  • Step #9 Cook & stir until thickened & bubbly.
  • Step #10 Add kosher salt & pepper to taste.
  • Step #11 When squash is fork tender, scoop it out of skins & toss with the sauce.
