Curried Chipotle Potato, Spinach And Cheese Wraps Recipe

Ingredients
  • 1/4 c chipotle salsa, or to taste
  • 2 tbsps cream
  • 4 slices Muenster cheese
  • 2 (10 inch) flour tortillas
  • 2 tbsps olive oil
  • 4 small red potatoes
  • curry paste, to taste
  • 2 c baby spinach, rinsed & dried

Directions
  • Step #1 Bring a small pot of salted water to a boil.
  • Step #2 Cook potatoes in boiling water until tender but still firm, about 15 mins.
  • Step #3 Drain, cool & chop.
  • Step #4 Heat olive oil in a large skillet over medium-high heat; add potatoes & cook this until warm.
  • Step #5 Stir in curry paste & cream over low heat/flame.
  • Step #6 Place two slices of cheese on each tortilla & microwave individually for fifteen to twenty-five seconds until melted.
  • Step #7 To assemble, divide the potatoes & spinach evenly between the tortillas & add chipotle salsa to taste.
  • Step #8 Heat in the microwave for twenty seconds, then enclose the tortillas around the filling.
