Chimichanga Recipe

Ingredients
  • 3 garlic cloves, minced .
  • 2 tbsps bacon drippings or vegetable oil .
  • 3 lbs shoulder boneless chuck roast (you could substitute with chicken also) .
  • Filling .
  • 1 c beef stock .
  • 1/2 c sliced onions .
  • salt & pepper .
  • tortillas

Directions
  • Step #1 Rub the salt & pepper on the roast.
  • Step #2 Saute in the oil.
  • Step #3 Add onion & garlic.
  • Step #4 Add the beef broth.
  • Step #5 Cover up tightly & let simmer for about 1 1/2 hrs, until roast is very tender.
  • Step #6 Cool until you can handle the roast.
  • Step #7 With 2 forks shred the beef into small pieces.
  • Step #8 Add the meat to the broth & add another 1/2°C sliced onion.
  • Step #9 Cook until all liquid is out of the beef.
  • Step #10 The beef should remain moist but not juicy.
  • Step #11 Warm the tortilla enough so that you can roll it.
  • Step #12 Place 3/4°C of the mixture in the center of the tortilla.
  • Step #13 Fold in sides & roll up.
  • Step #14 Secure with toothpicks.
  • Step #15 To serve: Warm 5 inches oil in Dutch oven or other large pan to 375°F Fry until golden brown, about 4 mins.
  • Step #16 Drain.
  • Step #17 Top with cheese sauce, sour cream, tomatoes & salsa.
  • Step #18 Serve as soon as possible.
