Savory Midwest Spaghetti Squash Salsa Recipe

Ingredients
  • 2 tsps fresh parsley, sliced .
  • pepper (optional) .
  • 1/4 c lime juice .
  • 1 tsp dried savory .
  • 1 pinch sugar (to taste) .
  • 1 c plum tomatoes, peeled & sliced (about 3 tomatoes) .
  • salt (optional) .
  • 1 (15 oz) can black beans, rinsed & drained .
  • 1 tsp fresh marjoram, sliced .
  • 1 medium spaghetti squash .
  • 1 tsp balsamic vinegar .
  • 1 pinch ground red pepper (to taste) .
  • 1 jalapeno pepper, finely sliced .
  • 2 garlic cloves, finely minced

Directions
  • Step #1 Pre heat oven to 350 degrees F.
  • Step #2 Cut the squash in half lengthwise & remove the seeds.
  • Step #3 Place the squash, in a 9x13 baking dish, cut side down, & add 1/2" of water to the dish.
  • Step #4 Bake for 45 mins or until the skin is tender to the touch.
  • Step #5 Cool.
  • Step #6 Remove the flesh with a fork, & place it In a large-ish mixing bowl.
  • Step #7 Add the remaining ingredients & mix well.
  • Step #8 Chill until serving time.
