Melissa's Easy Cheesy Enchiladas Recipe

Ingredients
  • 1 lb ground beef (or shredded chicken breast) .
  • 1 (12 oz) bag of kraft cheese (I use Kraft's Mexican mix) .
  • 1/2 c salsa (I recommend Pace) .
  • 8 large flour tortillas .
  • 1 small onion (sliced)

Directions
  • Step #1 Brown ground beef.
  • Step #2 Drain.
  • Step #3 Add sliced onion & continue cooking until onion is cooked through.
  • Step #4 Add 1/2 bag cheese.
  • Step #5 Add 1 c salsa.
  • Step #6 Preheat oven to 350°F.
  • Step #7 In a large baking pan, add half a c of salsa to bottom of pan.
  • Step #8 Spread out evenly.
  • Step #9 Scoop generous portions of meat mixture into tortillas.
  • Step #10 I use about 4 tbsps.
  • Step #11 Make sure you can still roll it.
  • Step #12 Roll & place it fold side down in the pan.
  • Step #13 Top with remaining salsa & cheese.
  • Step #14 Bake for 15 mins.
  • Step #15 Make sure not to over cook.
  • Step #16 It’s only placed in the oven to melt the cheese.
