Steak And Pinto Chili Recipe

Ingredients
  • 1 tbsp cumin powder .
  • 3 tbsps extra virgin olive oil .
  • 1/4 c chili powder (I use Ancho chili powder) .
  • 2 garlic cloves, crushed .
  • 1 onion, sliced .
  • 1 (28 oz) can Rotel tomatoes, drained .
  • 2 tbsps dry sherry .
  • 1 1/2 lbs sirloin steaks .
  • 1/4 c fresh cilantro, sliced .
  • 2 (15 oz) cans pinto beans, undrained

Directions
  • Step #1 Cut steak into roughly 1/2" dice.
  • Step #2 (This is easier to do if you put your thawed steak into the freezer for about 30 mins first.
  • Step #3 ).
  • Step #4 In a large saucepan, heat olive oil over med-heat/flame; add steak, stirring until lightly brown all over.
  • Step #5 Add onion & garlic, stirring to prevent garlic from browning.
  • Step #6 Heat until onion is translucent.
  • Step #7 Stir in chili powder & cumin.
  • Step #8 Add drained tomatoes & undrained pintos, bring to a boil & then reduce heat & let simmer for about 20 mins or until heated through & flavors develop.
  • Step #9 Stir in sherry & cilantro.
  • Step #10 Serve over hot rice, & garnish as desired with sour cream, shredded cheddar cheese & sliced scallions.
