Step #4 In a large saucepan, heat olive oil over med-heat/flame; add steak, stirring until lightly brown all over.
Step #5 Add onion & garlic, stirring to prevent garlic from browning.
Step #6 Heat until onion is translucent.
Step #7 Stir in chili powder & cumin.
Step #8 Add drained tomatoes & undrained pintos, bring to a boil & then reduce heat & let simmer for about 20 mins or until heated through & flavors develop.
Step #9 Stir in sherry & cilantro.
Step #10 Serve over hot rice, & garnish as desired with sour cream, shredded cheddar cheese & sliced scallions.
