Skinny Lasagna Recipe

Ingredients
  • 1 tsp dried basil, crushed .
  • 1 tsp dried oregano, crushed .
  • 1 (16 oz) can tomato sauce .
  • 1 c onions, sliced .
  • 2 egg whites, beaten .
  • 1/2 c parmesan cheese, grated .
  • 1 tsp sugar .
  • 1 (16 oz) can stewed tomatoes, cut up .
  • 4 oz mozzarella cheese, shredded .
  • 1 c mushrooms, sliced .
  • 1/2 lb ground sirloin .
  • 2 garlic cloves, minced .
  • 1 c skim milk ricotta cheese .
  • 1/4 tsp red peppers, crushed .
  • 1/2 tsp fennel seeds, crushed .
  • 6 lasagna noodles .
  • 1/4 tsp black pepper

Directions
  • Step #1 Cook the beef, mushrooms, onion, & garlic just til meat is brown; drain.
  • Step #2 Stir in undrained tomatoes, sugar, crushed red pepper, tomato sauce, fennel, basil, oregano, & black pepper & bring to a boil.
  • Step #3 Reduce heat & let simmer, uncovered, for 35 mins to thicken, stirring every once in awhile.
  • Step #4 In a small bowl, stir this together the beaten egg whites, ricotta, & 1/4 c Parmesan cheese.
  • Step #5 Cook the lasagna noodles just til tender, drain, & rinse with cold water.
  • Step #6 Spray an 11x7x2 inch baking dish with nonstick spray coating.
  • Step #7 Arrange 3 of the lasagna noodles in the bottom (trim to fit).
  • Step #8 Spread with half of the ricotta mixture.
  • Step #9 Spoon half of the sauce over the top & sprinkle with half of the mozzarella cheese.
  • Step #10 Repeat layering noodles, cheese mixture, & sauce -- but not the mozzarella.
  • Step #11 Sprinkle top the remaining 1/4 c of Parmesan over the top.
  • Step #12 Bake 35 mins at 350 degrees.
  • Step #13 Remove & sprinkle with reserved mozzarella.
  • Step #14 Return to ove & bake 5-10 mins more.
  • Step #15 Let stand 10 mins before cutting & serving.
