Icebox Butter Cookies With Chocolate And Pistachios Recipe

Ingredients
  • 2 1/2 c sifted all-purpose flour .
  • 1 tsp salt .
  • 1 tsp pure vanilla extract .
  • 1/3 c sliced pistachios .
  • 1/3 c sliced dark chocolate .
  • 3/4 c granulated sugar .
  • 1 c unsalted butter, room temperature .
  • 1/2 c sanding sugar .
  • 1 large egg

Directions
  • Step #1 In a medium bowl, cream butter & sugar with electric mixer on medium speed.
  • Step #2 Add egg & vanilla & beat to mix.
  • Step #3 Add flour & salt & beat on low to mix.
  • Step #4 Fold in chocolate & pistachios.
  • Step #5 Place dough in fridge for an hr to firm up.
  • Step #6 Place dough on clean floured surface & roll this into long tube.
  • Step #7 Wrap dough in wax paper & twist ends closed.
  • Step #8 Place dough into a paper towel roll (this helps the dough keeps its shape) & freeze overnight.
  • Step #9 Preheat oven to 350 degrees.
  • Step #10 Line two baking sheets with parchment paper.
  • Step #11 Let dough stand at about room temp for 15 mins.
  • Step #12 Roll dough in sanding sugar to coat.
  • Step #13 Slice log into 1/4 thick rounds.
  • Step #14 Place about 1 inch apart on cookie sheets.
  • Step #15 Place one cookie sheet on upper rack & one on lower rack.
  • Step #16 Bake for 8 mins.
  • Step #17 Swap racks & rotate cookie sheets & bake for another 8 mins.
  • Step #18 Continue to bake this until cookies are golden brown.
  • Step #19 Transfer cookies to wire rack to cool completely.
