Carbonara Recipe

Ingredients
  • 1/2 c dry white wine .
  • fresh parsley, for garnish .
  • 1 tsp red pepper flakes .
  • romano cheese, freshly grated .
  • 1/4 c extra virgin olive oil (enough to coat bottom of pan) .
  • 5-6 cloves garlic cloves, sliced .
  • 2 large egg yolks .
  • 1 lb spaghetti or rigatoni pasta .
  • 1/4 lb pancetta, sliced (Italian bacon)

Directions
  • Step #1 boil pasta.
  • Step #2 heat large skillet.
  • Step #3 add olive oil & pancetta.
  • Step #4 brown pancetta 2 mins.
  • Step #5 add red pepper flakes & garlic & cook 2-3 mins more.
  • Step #6 add wine & stir up all the pan drippings.
  • Step #7 in a separate bowl, beat yolks, then add about 1/2 c of the pasta cooking water.
  • Step #8 this tempers the eggs & keeps them from scrambling when added to the pasta.
  • Step #9 drain pasta well & add it directly to the skillet with pancetta & oil.
  • Step #10 pour the egg mixture over the pasta.
  • Step #11 toss rapidly to coat the pasta without cooking the egg.
  • Step #12 remove pan from heat & add a big handful of cheese, lots of pepper, & a little salt.
  • Step #13 continue to toss & turn the pasta until it soaks up egg mixture & thickens, 1 to 2 mins.
  • Step #14 garnish with parsley & extra grated romano.
