Chettinad Chicken Recipe

Ingredients
  • 3 green cardamoms, opened at one end .
  • 10 curry leaves .
  • 1 tsp salt .
  • 4 garlic cloves, sliced .
  • 4 cloves .
  • 1 large onion, sliced .
  • 2 tbsps white poppy seeds .
  • 2 tsps fresh ginger, finely sliced .
  • 3 lbs skinless chicken, & jointed .
  • 1 tsp turmeric .
  • 1/2 c coriander leaves, sliced .
  • 3 tomatoes, sliced .
  • 1/2 c oil .
  • 1/2 lime, juice of .
  • 1 tsp fennel seeds .
  • 3 tsps chili powder .
  • 2 inches cinnamon sticks, broken up .
  • 1/2 lb fresh coconut, grated

Directions
  • Step #1 Toast the poppy seeds in a dry pan till brown.
  • Step #2 Cool them & crush them.
  • Step #3 Soak them in a little water for 15 mins.
  • Step #4 Grind the coconut, cloves, poppy seeds with the cinnamon, cardamoms, fennel seeds & turmeric to make aa paste.
  • Step #5 Heat the oil & fry the onions till golden, add the ginger & garlic cook for 2 mins Add the chilli powder & the spice paste with 2 tbsp water, fry on low heat 5 mins.
  • Step #6 Add the chicken pieces & fry for 10 mins Add the tomatoes.
  • Step #7 When the liquid has been absorbed add 2 c of water & salt to taste.
  • Step #8 Cook uncovered till chicken is tender, add the lime juice, curry leaves & sliced coriander.
