Pasta E Fagioli Recipe

Ingredients
  • salt .
  • olive oil .
  • 400F g cooked borlotti beans .
  • 3 tbsps tomato paste .
  • 1 garlic clove .
  • basil .
  • 250 g dry Italian sausage .
  • 400F g sliced tomatoes .
  • grated parmesan cheese .
  • bay leaves .
  • 1 brown onion .
  • pepper .
  • parsley .
  • 500 g fresh fettuccine pasta

Directions
  • Step #1 Remove skin from sausage & cut into bite size pieces.
  • Step #2 Place 2 tbsp of oil into a heavy base saucepan & on low heat saute sliced onion, crushed garlic & sausage until soft.
  • Step #3 Add sliced tomato,tomato paste & a little water & let simmer for 30 mintues.
  • Step #4 Stir every once in awhile & add a little extra water if necessary.
  • Step #5 Add beans, salt, pepper, crushed bay leaf, parsley & basil.
  • Step #6 Simmer for a further 20 mintues.
  • Step #7 Stir every once in awhile & add extra water if required.
  • Step #8 Taste the sauce & add seasonings to your taste.
  • Step #9 Cook fettucine as per directions.
  • Step #10 Drain & set aside.
  • Step #11 Place fettucine In a large-ish serving bowl & add sauce.
  • Step #12 Toss the fettucine until it is well mixed with the sauce.
  • Step #13 Serve with grated parmesan cheese.
