Dark Chocolate Pecan Pie Recipe

Ingredients
  • 6 oz cold unsalted butter, cut into 1/4-inch dice .
  • 6 oz bittersweet chocolate, broken into pieces .
  • 3 large eggs, lightly beaten .
  • 1 tsp sugar .
  • 1/2 c light brown sugar .
  • 2 c all-purpose flour, plus more for rolling .
  • 1 tsp pure vanilla extract .
  • 1 pinch kosher salt .
  • 1/2 tsp kosher salt .
  • 1/4 c ice water .
  • 4 tbsps unsalted butter .
  • 3/4 c light corn syrup .
  • 1 1/2 c pecan halves

Directions
  • Step #1 MAKE THE DOUGH: In a food processor/blender, mix the 2 c of flour with the sugar & salt; process to mix.
  • Step #2 Add the butter to the dry ingredients & process until the largest pieces of butter are the size of peas.
  • Step #3 With the machine on, slowly pour in the ice water & process just until it's incorporated.
  • Step #4 Transfer the dough to a bowl & knead a few times.
  • Step #5 Pat the dough into a 1-inch-thick disk & wrap in plastic.
  • Step #6 Refrigerate the dough until firm, at least 1 hr or overnight.
  • Step #7 Let the dough soften slightly.
  • Step #8 On a floured work surface, roll out the dough to a round, about 1/8 inch thick.
  • Step #9 Roll the dough onto the rolling pin & unroll it over a 9-inch glass pie plate.
  • Step #10 Press the dough into the pie plate, being careful not to stretch it.
  • Step #11 Using scissors, trim the overhang to 1 1/2 inches.
  • Step #12 Fold the dough under itself & crimp decoratively.
  • Step #13 Refrigerate the pie shell until firm, at least 30 mins.
  • Step #14 Preheat the oven to 375°.
  • Step #15 Prick the chilled pie shell all over with the tines of a fork.
  • Step #16 Line the shell with foil wrap & fill with dried beans or pie weights.
  • Step #17 Fold the foil wrap over the weights so the side of the pie shell is exposed.
  • Step #18 Bake the shell for 25 mins, or until the side & rim are golden.
  • Step #19 Carefully remove the foil wrap & continue baking the shell until the bottom is beginning to brown, about 15 mins longer.
  • Step #20 Reduce the oven temperature to 350°.
  • Step #21 MAKE THE FILLING: Spread the pecans on a baking sheet & bake for 5 mins, stirring once.
  • Step #22 Transfer the pecans to a plate.
  • Step #23 In a small microwave-safe glass bowl, melt the butter with the chocolate in a microwave oven.
  • Step #24 Stir until mixed & smooth.
  • Step #25 Scrape the chocolate mixture into a medium bowl & add the brown sugar.
  • Step #26 Stir in the eggs, vanilla & kosher salt, corn syrup, then stir in the the pecans.
  • Step #27 Pour the filling into the pie shell & bake for 45 to 50 mins, or until set in the center.
  • Step #28 Let the pie cool completely.
