Any Grain And Honeyed Squash Casserole With Nuts Recipe

Ingredients
  • 1 tbsp agave nectar .
  • 2 lbs butternut squash, peeled, seeded & grated (about 7 c) .
  • 3 c cooked barley (can use any type) .
  • 1 tsp salt .
  • 3 tbsps marsala or dry sherry .
  • 3 tbsps agave nectar .
  • For squash mixture .
  • 1/2 tsp minced fresh rosemary .
  • For topping .
  • fresh ground pepper, to taste .
  • 3 tbsps unsalted butter, melted .
  • 1/4 c dried cranberries .
  • 3/4 c pecans, roughly sliced .
  • 1/4 tsp salt

Directions
  • Step #1 Preheat oven to 400F degrees.
  • Step #2 In a large bowl, cranberries, mix squash, rosemary, Marsala (or sherry), agave, salt & pepper.
  • Step #3 Transfer mixture to a 2 quart gratin dish or a 7 x 11-inch rectangular baking dish, sprayed with non-stick spray.
  • Step #4 In same bowl, mix grains, salt, butter & agave until the grains are well coated.
  • Step #5 Distribute grains over squash in an even layer.
  • Step #6 Cover up dish with foil wrap & bake this until squash is tender, 20 to 25 mins.
  • Step #7 Remove foil wrap & sprinkle with the pecans.
  • Step #8 Continue baking until nuts are lightly browned, 4 to 5 mins longer.
