White Choclate And Cream Cheese Icing Recipe

Ingredients
  • 4 white chocolate baking squares (about 4 oz) .
  • 8 oz cream cheese, at about room temp .
  • 2 c whipping cream .
  • 2 tbsps unsalted butter, at about room temp .
  • coconut, toasted (optional) .
  • 3 tbsps lime juice, freshly squeezed .
  • 1 1/2 c icing sugar .
  • 1 tbsp vanilla

Directions
  • Step #1 Coarsely chop chocolate.
  • Step #2 Place in a small bowl & microwave on medium, stirring halfway through, until almost melted, 2 to 3 mins.
  • Step #3 Remove & stir until smooth.
  • Step #4 In a large bowl,beat cream cheese with butter, using an electric mixer, lime juice & vanilla until smooth.
  • Step #5 Then beat in chocolate.
  • Step #6 Gradually beat in icing sugar until evenly mixed.
  • Step #7 In a medium-size bowl, using an electric mixer, whip cream until soft peaks form when beaters are lifted.
  • Step #8 Stir one-third of whipped cream into cream cheese mixture until evenly mixed, then carefully fold in remaining cream, just until no streaks remain.
  • Step #9 It's best to fill & frost cake right away.
  • Step #10 Sprinkle top toasted coconut over cake.
  • Step #11 Don't put in the fridge icing before using.
