1 (10 oz) can Rotel tomatoes & chilies, drained (use the "original" crushed variety) .
3 c shredded reduced-fat cheddar cheese .
1 (16 oz) can vegetarian refried beans .
6 whole wheat flour tortillas
Directions
Step #1 In a medium bowl, mix the refried beans & the Rotel, & stir well.
Step #2 Over low heat, place a tortilla In a large-ish pan.
Step #3 Cover up half of it with shredded cheese.
Step #4 Add 1/6 of the bean mixture, & top this with more cheese.
Step #5 Fold the other half of the tortilla over the top.
Step #6 When the cheese on the bottom is melted, carefully flip over.
Step #7 Use 2 spatulas to help you do this without spilling.
Step #8 When the second side is melted & the insides are warm, serve as soon as possible, or place this in a 200 degree oven to keep warm until the rest of the quesadillas are ready.
Step #9 Serve with your favorite salsa, & if desired sour cream.
