Bacon Mushroom Pasta Bake Recipe

Ingredients
  • 2 tsps butter .
  • fresh thyme sprigs (optional) .
  • 2 c milk .
  • 4 oz cremini mushrooms, sliced .
  • 2 oz bacon .
  • 8 oz shiitake mushroom caps, sliced .
  • 1/4 c shallots, sliced .
  • 8 oz radiatore, uncooked .
  • 3 garlic cloves, minced .
  • 1/4 tsp fresh ground black pepper .
  • cooking spray .
  • 1 c asiago cheese, grated (divided) .
  • 1 tbsp dry sherry .
  • 4 oz morels, sliced .
  • 1/4 c all-purpose flour .
  • 1/2 tsp kosher salt .
  • 1 tbsp fresh thyme, sliced

Directions
  • Step #1 reheat oven to 375°.
  • Step #2 Cook pasta according to the package directions, omitting salt & fat.
  • Step #3 Drain well.
  • Step #4 Set cooked pasta aside.
  • Step #5 Cook bacon & set aside to cool.
  • Step #6 Melt butter In a large-ish nonstick skillet over medium-high heat.
  • Step #7 Add shallots; sauté 3 mins.
  • Step #8 Add mushrooms, 1 tbsp thyme, salt, pepper, & garlic; sauté 8 mins or until mushrooms are tender.
  • Step #9 Add sherry; cook 1 min, stirring frequently.
  • Step #10 Remove from heat.
  • Step #11 Place flour in a Dutch oven over medium-high heat; slowly add milk, stirring constantly with a whisk.
  • Step #12 Bring mixture to a boil; cook 1 min or until slightly thick, stirring constantly with a whisk.
  • Step #13 Remove from heat; add 1/2 c cheese, stirring until melted.
  • Step #14 Add pasta & mushroom mixture to cheese mixture, crumble in the bacon, tossing well to mix.
  • Step #15 Spoon pasta mixture into an 8-inch square baking dish lightly coated with cooking spray; sprinkle evenly with remaining 1/2 c cheese.
  • Step #16 Bake at 375° for 30 mins or until cheese melts & begins to brown.
  • Step #17 Garnish with thyme sprigs, if desired.
