Cherry Pineapple Fruitcake Recipe

Ingredients
  • 1 tsp baking powder
  • 2 tsps vanilla extract
  • 6 eggs
  • 4 c all-purpose flour, divided
  • 1 c sliced candied cherries
  • 2 c butter or margarine, softened
  • 2 c sliced pecans
  • 2 c sugar
  • 1 c sliced candied pineapple

Directions
  • Step #1 In a bowl, pineapple, mix the cherries, pecans & 1 c flour; set aside.
  • Step #2 In a mixing bowl, cream butter & sugar.
  • Step #3 Add eggs, one at a time, beating well after each.
  • Step #4 Beat in vanilla.
  • Step #5 Combine baking powder & remaining flour; slowly add to creamed mixture.
  • Step #6 Fold in fruit mixture.
  • Step #7 Spoon into a greased & waxed paper-lined 10-in.
  • Step #8 tube pan.
  • Step #9 Bake at 300F degrees F for 1-3/4 to 2 hrs or until a toothpick inserted near the center comes out clean.
  • Step #10 Cool for 10 mins before removing from pan to a wire rack.
  • Step #11 Remove waxed paper while warm; cool completely before slicing.
