Flamed Cherry Pork Loin Chops Recipe

Ingredients
  • 2 tbsps olive oil .
  • 2 tbsps shallots (minced) .
  • 1/4 tsp sea salt .
  • 1 (15 oz) can cherries in juice, drained .
  • 4 center-cut pork loin chops .
  • 1/4 tsp pepper .
  • 1 tbsp brandy .
  • 2 tbsps light margarine (cut into pieces) .
  • 2 tbsps fresh mint (finely sliced) .
  • 1 tbsp sugar .
  • 1/2 c fat free chicken broth

Directions
  • Step #1 Preheat oven to 375°F Drain cherries & sprinkle w/ sugar.
  • Step #2 Set aside.
  • Step #3 Heat cast iron skillet over med-heat/flame.
  • Step #4 Spice up chops with salt & pepper.
  • Step #5 Add 1 tbsp olive oil to skillet.
  • Step #6 Sear chops on both sides to caramelize.
  • Step #7 Place loose foil wrap "tent" over pan & transfer chops to oven.
  • Step #8 Cook 7-8 mins.
  • Step #9 Transfer chops individual plates & cover chops with foil wrap.
  • Step #10 Place chop skillet over med-heat/flame & add 1 tbsp olive oil.
  • Step #11 Add shallots & saute 2 mins.
  • Step #12 Add cherries & heat until just warmed.
  • Step #13 IMPORTANT: Remove from burner! Add brandy, then flame the pan.
  • Step #14 Do not leave pan on burner when adding flame, as it could get out of hand.
  • Step #15 (If you're not comfortable flaming the pan, feel free to omit brandy altogether.
  • Step #16 You can simply add broth & reduce over med-heat/flame for a couple of mins).
  • Step #17 Burn off alcohol for 1 min, then broth.
  • Step #18 Reduce broth a couple of mins, then add margarine.
  • Step #19 Stir sauce & add mint.
  • Step #20 Place chops on individual plates & pour over with sauce.
