Ingredients
1/4 c sugar .
1 c blanched almonds, finely ground .
1 1/2 c all-purpose flour .
For the filling .
1/2 c unsalted butter .
1/2 c sugar .
7 tbsps unsalted butter .
For the crumble topping .
1 c blueberries .
1/4 c all-purpose flour .
2 large eggs .
1 c all-purpose flour .
1/2 tsp vanilla .
2/3 c sugar .
8 scoops vanilla ice cream (optional) .
1 c blackberries .
1 c raspberries .
1/8 tsp baking powder .
1 large egg .
For the Pastry .
1/2 c unsalted butter
Directions
Step #1 To make the pastry, sugar, stir this together flour, & baking powder.
Step #2 Cut in butter until fine crumbs form.
Step #3 Mix in egg until dough sticks together.
Step #4 Squeeze dough between fingers until it holds together.
Step #5 If making ahead, wrap airtight & chill up to one day.
Step #6 To make topping, mix together flour & sugar.
Step #7 Cut butter & vanilla into the flour mixture until it resembles coarse crumbs.
Step #8 Squeeze dough between fingers until it holds together.
Step #9 If making ahead, wrap airtight & chill up to one day.
Step #10 To make almond filling, beat together at high speed, sugar & softened butter until mixed.
Step #11 Beat in eggs, one at a time, until fluffy & well mixed.
Step #12 Stir in flour & 1 c ground almonds until just evenly mixed.
Step #13 Preheat oven to 350°F.
Step #14 To assemble pie, press pastry onto bottom & up sides of a 9-inch pie pan.
Step #15 Bring edges of crust even with pan rim & flute edges.
Step #16 Spread almond filling in pastry.
Step #17 Bake until crust is lightly browned & filling is puffy, about 20 mins.
Step #18 Mix together berries & sprinkle it over filling.
Step #19 Press carefully down into filling if necessary to anchor berries.
Step #20 Break topping into small chunks & spread over berries.
Step #21 Return pie to oven & bake this until crumble topping is lightly browned, about 35 mins.
Step #22 Serve warm or at about room temp with ice cream, if desired.
