Step #2 Sift the flour, baking powder, soda & salt into a large mixing bowl.
Step #3 Cut the butter into small pieces & add.
Step #4 Cut it into the flour with a pastry mixer until the mixture is the size of peas.
Step #5 Add the raisins & toss to distribute evenly, using two forks.
Step #6 Beat the egg in another bowl until very frothy.
Step #7 Beat in the honey.
Step #8 When it is well mixed, beat in the buttermilk.
Step #9 Gradually pour the liquids into the flour, tossing all the while with a fork so the mixture gets evenly moistened.
Step #10 Continue tossing lightly with two forks until the batter comes together; it doesn’t have to be completely mixed & should be very rough & lumpy.
Step #11 Butter a heavy skillet or casserole, 10 to 11 inches in diameter & 2 to 3 inches deep.
Step #12 Round is the traditional shape.
Step #13 Spoon batter somewhat in the middle.
Step #14 Bake at 350°F about an hr or until the middle is set.
Step #15 Cut out a piece to test if necessary.
Step #16 Cut into wedges & serve warm from the pan.
Step #17 Serves 12, more or less.
