Pesto Roast Chicken Recipe

Ingredients

1/4 c roasted pine nuts .
1/3 c extra virgin olive oil .
salt .
lemon pepper .
2 Cornish hens (quartered) .
1/2 c parmesan cheese .
3 garlic cloves .
2 c fresh basil

Directions

Step #1 Preheat oven to 375.
Step #2 Quarter hens, season this with salt & pepper & place skin side up on baking sheets (set aside).
Step #3 In a mixer or mortar, garlic, pine nuts, mix basil, oil, & pinch of salt & pepper.
Step #4 Blend until smooth, stir in the cheese.
Step #5 Rub hens with pesto & roast covered for 35-45 mins or until it reaches 180°F.
