Chicken Alfredo - Low Carb Recipe

Ingredients
  • 6 medium boneless skinless chicken breasts .
  • 1/3 c roasted red peppers, drained & cut into thin strips .
  • 1 tbsp cooking oil .
  • 3 tbsps fresh basil, finely shredded .
  • 1 c whipping cream .
  • 4 oz asiago cheese or parmesan cheese, finely shredded (1 c) .
  • salt & black pepper

Directions
  • Step #1 Sprinkle top chicken with salt & pepper.
  • Step #2 In a 12-inch skillet brown chicken breasts in hot oil about 10 mins, turning to brown evenly.
  • Step #3 Transfer chicken to a 3-quart rectangular baking dish; set aside.
  • Step #4 For sauce, in a medium saucepan beat whipping cream with a wire whisk or rotary beater for 1 to 2 mins or until thickened.
  • Step #5 Heat over med-heat/flame just until simmering.
  • Step #6 Reduce heat to medium-low.
  • Step #7 Gradually whisk in cheese until melted.
  • Step #8 Pour sauce over chicken breasts in dish; top this with sweet peppers.
  • Step #9 Bake, uncovered, in a 350 degrees oven for 15 to 20 mins or until chicken is no longer pink (170 degrees F).
  • Step #10 Sprinkle top with basil.
