Italian Breaded Chicken Breasts Recipe

Ingredients
  • salt & pepper .
  • 1/2 c grated romano cheese or parmesan cheese .
  • 1/2 c flour .
  • 2 tbsps sliced parsley (fresh is best but dried works in a pinch) .
  • 2-3 tbsps olive oil .
  • 1/4 tsp garlic powder .
  • 1 egg .
  • 1 c dry breadcrumbs .
  • 4 boneless skinless chicken breasts

Directions
  • Step #1 Clean breasts of visible fat & tendons.
  • Step #2 Pound each with the flat side of a mallet until evenly 1/4 inch thick.
  • Step #3 (You may want to cut large cutlets in half).
  • Step #4 Mix breadcrumbs in flat bowl with cheese & parsley.
  • Step #5 Mix flour in another flat bowl with salt, pepper & garlic powder.
  • Step #6 Beat egg & water in another flat bowl.
  • Step #7 Dredge each piece in flour, then egg, then dip in egg & coat with breadcrumbs.
  • Step #8 Set on a piece of wax paper for 5 mins to let breading adhere.
  • Step #9 Heat olive oil in pan over med-heat/flame.
  • Step #10 Add chicken cutlets & cook about 4 min per side until nicely browned.
