Cream Of Yam And Spinach Soup Recipe

Ingredients
  • 1/2 c sliced green onion stems .
  • 2 tbsps minced garlic .
  • 3 c fresh yams .
  • 1 c sliced onions .
  • 3 (14 oz) cans vegetarian broth .
  • salt & pepper .
  • 1 c all-purpose flour .
  • 2 c skim milk .
  • 1 tbsp olive oil .
  • 1/2 c sliced celery .
  • 1 red pepper, seeded & sliced .
  • 1 (10 oz) bag fresh spinach leaves, stemmed & coarsely sliced

Directions
  • Step #1 In a large heavy pot, celery, red bell pepper & garlic until the vegetables are tender, heat olive oil to medium-high, & cook onion, about 5-7 mins.
  • Step #2 Whisk in the flour & slowly add the broth, whisking until soup is mixed.
  • Step #3 Add the yams & bring to a boil, cover & reduce the heat to low, or a slow simmer.
  • Step #4 Cook approximately 20 mins or until the potatoes are very tender.
  • Step #5 Add the spinach, salt & pepper (I didn't measure, milk, green onions, but guesstimate that I used between 1/2 & 3/4 tsps salt).
  • Step #6 Turn the heat back up to medium.
  • Step #7 Cook until spinach is wilted & soup well heated & thickened, about 5 mins.
