Step #1 In a large heavy pot, celery, red bell pepper & garlic until the vegetables are tender, heat olive oil to medium-high, & cook onion, about 5-7 mins.
Step #2 Whisk in the flour & slowly add the broth, whisking until soup is mixed.
Step #3 Add the yams & bring to a boil, cover & reduce the heat to low, or a slow simmer.
Step #4 Cook approximately 20 mins or until the potatoes are very tender.
Step #5 Add the spinach, salt & pepper (I didn't measure, milk, green onions, but guesstimate that I used between 1/2 & 3/4 tsps salt).
Step #6 Turn the heat back up to medium.
Step #7 Cook until spinach is wilted & soup well heated & thickened, about 5 mins.
