Green Beans With Shiitake Mushrooms Recipe

Ingredients
  • salt, to taste .
  • fresh ground black pepper, to taste .
  • 2 garlic cloves, minced .
  • 8 oz fresh shiitake mushrooms, stemmed, caps sliced .
  • 2 lbs green beans, slender, trimmed .
  • 6 tbsps butter, 3/4 stick .
  • 2/3 c low sodium chicken broth .
  • 2 shallots, sliced

Directions
  • Step #1 Melt 3 tbsps butter in large nonstick skillet over medium-high heat.
  • Step #2 Add shiitake mushrooms & sauté until tender, about 5 mins.
  • Step #3 Transfer mushrooms to medium bowl.
  • Step #4 Melt remaining 3 tbsps butter in same skillet.
  • Step #5 Add shallots & garlic & sauté until tender, about 2 mins.
  • Step #6 Add green beans & toss to coat with butter.
  • Step #7 Pour broth over green bean mixture.
  • Step #8 Cover up & let simmer until liquid evaporates & green beans are crisp-tender, about 10 mins.
  • Step #9 Stir in shiitake mushrooms.
  • Step #10 Spice up to taste with salt & pepper.
  • Step #11 Transfer to platter & serve.
