Ingredients
1 tsp baking powder (use semi-heaping tspful) .
2 tsps vanilla .
1/4 c flour .
3 c blueberries (fresh or frozen) .
3/4 c sugar .
TOPPING .
3 tbsps whipping cream, unwhipped .
2 large eggs .
3 c flour .
1 tsp baking soda (use semi-heaping tspful) .
1/2 tsp cinnamon (can use more if desired) (optional) .
1 c butter, softened (no substitutes!) .
3 tbsps soft butter .
1 1/4 c sugar .
1/4 c milk .
1 (8 oz) package cream cheese, softened
Directions
Step #1 Set oven to 350° (set oven rack to second-lowest position).
Step #2 Grease a 13 x 9-inch baking dish.
Step #3 In a bowl sift together the first 3 ingredients.
Step #4 In a small bowl mix together the milk with whipping cream; set aside.
Step #5 In another bowl cream the butter with sugar & vanilla for about 4 mins (no sugar granules should remain in the mixture).
Step #6 Add in eggs & cream cheese; beat until thoroughly mixed.
Step #7 Add in the flour mixture alternately with milk/cream mixture.
Step #8 Spread HALF of the batter into prepared baking dish, then sprinkle the blueberries over the batter.
Step #9 Spread the remaining batter over blueberries.
Step #10 For the topping mix together the sugar with flour & cinnamon (if using) add in softened butter & mix with fingers until blanded.
Step #11 Sprinkle top on top of the cake batter.
Step #12 Bake for about 45-50 mins, or until cake tests done.
