Whole Wheat Pumpkin Cornbread Recipe

Ingredients
  • 1/2 tsp salt .
  • 2 tsps baking powder .
  • 4 eggs .
  • 1 tsp cinnamon .
  • 1 1/2 c whole wheat flour .
  • 1 c cornmeal .
  • 3/4 c light brown sugar, packed .
  • 1 tsp baking soda .
  • 1/3 c butter, softened .
  • 1 c milk .
  • 1/4 tsp ground cloves .
  • 1 1/3 c canned pumpkin puree .
  • 1/2 tsp nutmeg

Directions
  • Step #1 Preheat oven to 350°F.
  • Step #2 Spray a 9 inch square baking pan with nonstick cooking spray & coat lightly with flour.
  • Step #3 Combine the first 8 dry ingredients.
  • Step #4 In another bowl, beat the butter & sugar together until fluffy.
  • Step #5 Add eggs & pumpkin & mix thoroughly.
  • Step #6 Add dry mixture & milk alternately until all are incorporated & the mixture is smooth.
  • Step #7 Pour into pan.
  • Step #8 Bake 60-70 mins, until tester inserted in center comes out clean.
