Wholemeal Fresh Dough Thin Crust Pizza Recipe

Ingredients
  • 8 garlic cloves, sliced .
  • 3 tbsps soya flour .
  • 3 tbsps wheat bran flour .
  • 6-8 basil leaves .
  • 1 small red bell pepper, roundels .
  • 1 medium onion, sliced .
  • 2-3 sun-dried tomatoes .
  • 1 small yellow bell pepper, roundels .
  • 2 tbsps olive oil .
  • 1 large onion, cut into roundels .
  • 1 tsp black peppercorns, freshly ground .
  • 1 c corn niblets, boiled .
  • 1 c tomato puree .
  • For Sauce .
  • 1 small green capsicum, roundels .
  • 4 fresh oregano leaves .
  • 1 c tomatoes, concasse .
  • 1 tsp salt .
  • 50 g cottage cheese, cubed .
  • 1 c whole wheat flour .
  • 1 tsp fresh yeast .
  • 1 c mozzarella cheese, grated .
  • 3 tbsps olive oil .
  • 1 tsp sugar .
  • 1 tsp dried oregano

Directions
  • Step #1 Put both the flour & wheat bran in a bowl & mix to mix.
  • Step #2 Dissolve sugar & salt in a little water.
  • Step #3 In another small bowl, dissolve yeast in a little warm water.
  • Step #4 Add the 2 wet mixtures to the dry flour-bran mixture.
  • Step #5 Add 1 tbsps oil & mix well.
  • Step #6 Add enough water to make a soft dough.
  • Step #7 Dab a few drops of oil on the dough, cover with a wet muslin cloth & keep aside for 45 mins to ferment in a warm place.
  • Step #8 Apply some more olive oil & knead the dough to remove excess air.
  • Step #9 Keep covered for 30 mins.
  • Step #10 Pre-heat oven to 200°C.
  • Step #11 To prepare pizza sauce, heat olive oil in a pan.
  • Step #12 Add onion, garlic, tomato concasse & saute for a few mins.
  • Step #13 Stir in tomato puree, salt & black pepper.
  • Step #14 Fold in fresh oregano & let simmer for 5 mins.
  • Step #15 Add dried oregano mix & remove this from heat.
  • Step #16 Dust table top this with a little flour.
  • Step #17 Roll out a portion of the dough on the table top to form a thin roundel of approximately 8 inch diameter.
  • Step #18 Grease a baking tray with little oil.
  • Step #19 Place pizza base on it & prick with a fork.
  • Step #20 Spread some pizza sauce over it.
  • Step #21 Add fresh basil after tearing with hands.
  • Step #22 Place onion roundels, corn niblets, sun dried tomatoes, panner cubes(cottage cheese cubes) & grated Mozzarella cheese on the base.
  • Step #23 Add the toppings on the cheese again.
  • Step #24 Top with three coloured bell pepper, olives & some more Mozzarella cheese.
  • Step #25 Bake in the pre-heated oven for 15-20 mins at 200°C.
  • Step #26 Cut into slices.
  • Step #27 Serve hot.
