Double Coconut Flan Recipe

Ingredients
  • 1 c unsweetened flaked coconut .
  • 4 large eggs .
  • 1/2 c sugar .
  • 13 1/2 oz canned unsweetened coconut milk

Directions
  • Step #1 Place a nonstick frying pan over medium-high heat until hot.
  • Step #2 Add flaked coconut & cook, until coconut is toasted, stirring constantly, about 5 mins.
  • Step #3 Immediately remove this from pan & let cool.
  • Step #4 Put eggs, 1/3 c of the toasted coconut, coconut milk, & sugar in the jar of a mixer & process briefly to mix.
  • Step #5 Pour mixture into a glass pie dish; cover dish with plastic wrap.
  • Step #6 Prepare a stir-fry pan for steaming.
  • Step #7 Place dish in steamer; steam, covered, until custard is set, over med-heat/flame, 20 to 25 mins.
  • Step #8 Carefully remove dish from steamer & discard plastic wrap.
  • Step #9 Sprinkle top the remaining 1/3 c toasted coconut over flan.
  • Step #10 Scoop into bowls & serve warm.
