Polynesian Pork And Rice Recipe

Ingredients
  • 4 c cooked rice .
  • 1/3 c ketchup .
  • 1/8 tsp pepper .
  • 1 (15 oz) can pineapple tidbits (or chunks, drained) .
  • 1 tsp worcestershire sauce .
  • 2 tbsps extra virgin olive oil (or canola oil) .
  • 1 1/2-2 lbs pork butt (or shoulder, or pork steak) .
  • 1 1/2 tsps salt .
  • 1/4 c flour .
  • 3/4-1 c juice (from the canned fruit or fruit juice) .
  • 1 small onion .
  • 1 c celery .
  • 1 medium green pepper .
  • 2 tsps prepared mustard

Directions
  • Step #1 Cut the pork in 1-inch cubes.
  • Step #2 Mix the flour, salt & pepper.
  • Step #3 Coat the pork with the flour mixture using all the flour.
  • Step #4 Brown in oil In a large-ish pan.
  • Step #5 Slice the celery & onion.
  • Step #6 Slice the peppers into thin strips.
  • Step #7 Add the vegetables to the pan along with the remaining ingredients.
  • Step #8 (**Do not add rice).
  • Step #9 Simmer covered for 30 mins.
  • Step #10 Serve over rice.
