Ingredients
  • tomatoes (sliced or sliced, for serving) .
  • salsa, for serving .
  • salt & pepper, to taste .
  • 8 eggs .
  • guacamole, for serving .
  • 1 c sliced ham .
  • 1 c grated cheddar cheese or monterey jack cheese .
  • sour cream, for serving .
  • 2 c heavy cream .
  • 4 oz sliced mild green chilies

Directions
  • Step #1 Preheat oven to 350°F generously spray 8 individual-size ramekins with non-stick cooking spray.
  • Step #2 Divide chilies among ramekins.
  • Step #3 Sprinkle top with cheese & ham.
  • Step #4 Blend eggs, cream, salt & pepper in a mixer.
  • Step #5 Divide egg mixture among ramekins, filling ramekins almost to the top.
  • Step #6 Bake for 35-40 mins.
  • Step #7 Serve with guacamole, salsa, sour cream & tomatoes.
