Vermont Cheddar Mashed Yukon Gold Potatoes Recipe

Ingredients
  • 1 tsp salt .
  • 1 1/2 c shredded reduced-fat extra sharp cheddar cheese, divided .
  • 1/2 tsp fresh ground pepper .
  • 1/4 c sliced fresh chives, divided .
  • 3 lbs yukon gold potatoes, cut into 1 1/2 -inch pieces .
  • 3/4 c low-fat buttermilk

Directions
  • Step #1 Place potatoes In a large-ish Dutch oven & add enough water to cover.
  • Step #2 Bring to a boil over high heat.
  • Step #3 Boil until very tender when pierced with a fork, 20 to 25 mins.
  • Step #4 Remove from the heat.
  • Step #5 Drain & return the potatoes to the pot.
  • Step #6 Mash with a potato masher.
  • Step #7 Stir in 1 1/4 c cheese until melted.
  • Step #8 Add buttermilk, salt & pepper & stir this to mix.
  • Step #9 Gently fold in 3 tbsps chives.
  • Step #10 Transfer to a serving dish & garnish with the remaining 1/4 c cheese & 1 tbsp chives.
