Almond Pistachio Biscotti Recipe

Ingredients
  • 1 3/4 c all-purpose flour .
  • 2/3 c granulated sugar .
  • 1 c whole almonds, toasted* .
  • 1 tbsp vanilla extract .
  • 2 large eggs, plus .
  • 1/4 tsp salt .
  • 3 tbsps cold butter, cut into pieces .
  • 3 oz semisweet chocolate, finely sliced .
  • 1 c shelled pistachios .
  • 1 large egg yolk, at about room temp .
  • 1/2 c almond paste .
  • 1 1/4 tsps baking powder

Directions
  • Step #1 Preheat oven to 350°F Spray baking sheet with vegetable cooking spray.
  • Step #2 Place flour, sugar, baking powder & salt in food processor/blender bowl.
  • Step #3 Cover up & pulse until mixed.
  • Step #4 Add almond paste & butter.
  • Step #5 Cover up & pulse until mixture forms coarse crumbs.
  • Step #6 Turn mixture into mixing bowl.
  • Step #7 Add almonds, pistachios & chocolate.
  • Step #8 Beat together whole eggs & egg yolk with a fork.
  • Step #9 Remove 2 tsps & set aside for egg wash.
  • Step #10 Make a well in flour mixture.
  • Step #11 Add remaining eggs & vanilla & stir until mixture holds together.
  • Step #12 With floured hands, shape dough into four (12-inch-long) logs.
  • Step #13 Place logs 2 inches apart on prepared baking sheet.
  • Step #14 Flatten each log to a width of 1 1/4 inches.
  • Step #15 Lightly brush logs with reserved egg wash.
  • Step #16 Bake for 25 to 35 mins or until logs start to brown & no imprint remains when pressed lightly with finger.
  • Step #17 Cool on baking sheet on wire rack for 20 mins.
  • Step #18 Reduce oven temperature to 325°F Carefully transfer logs to a cutting surface.
  • Step #19 Cut logs on the diagonal into 1/2-inch-thick slices.
  • Step #20 Place biscotti standing up 1/2 inch apart on two ungreased baking sheets.
  • Step #21 Bake 15 to 25 mins more or until biscotti are dry & the sides begin to color slightly.
  • Step #22 Do not overbake.
  • Step #23 Cool biscotti on baking sheets for 5 mins.
  • Step #24 Transfer to wire racks & cool completely.
  • Step #25 Store biscotti in an airtight container in a cool, dry place.
  • Step #26 *To toast almonds, spread on baking sheet.
  • Step #27 Bake at 350°F for 8 to 10 mins or until toasted.
