Carrot Orzo Recipe

Ingredients
  • 2 tbsps butter .
  • 6 oz peeled baby carrots (about 1 1/4 c, from 16-oz package) .
  • 1 1/2 c water .
  • 1 tsp minced fresh rosemary .
  • 1 large garlic clove, minced .
  • 1 c orzo pasta (rice-shaped pasta, about 8 oz) .
  • 1 1/4 c low sodium chicken broth .
  • 2 tbsps sliced green onions .
  • 1/4 c grated parmesan cheese

Directions
  • Step #1 Place carrots in processor.
  • Step #2 Using on/off turns, finely chop carrots.
  • Step #3 Melt butter in heavy medium saucepan over med-heat/flame.
  • Step #4 Add orzo & carrots; sauté until orzo is golden, about 5 mins.
  • Step #5 Add 1 1/2 c water, stirring frequently, broth, & garlic; cook uncovered over med-heat/flame until all liquid is absorbed, about 15-20 mins.
  • Step #6 Stir in cheese, green onions, & rosemary.
  • Step #7 Spice up to taste with salt & pepper & serve.
