Step #1 Light your grill.
Step #2 If using charcoal, allow the coals to burn until they are grey.
Step #3 Gas grills should be on low.
Step #4 Mix sugar & ginger on a plate.
Step #5 Cut peaches in half & remove the pits.
Step #6 Set the peaches cut side down on the plate with the sugar & ginger mixture.
Step #7 Place the peaches sugar side down on the center of the grate.
Step #8 Cook for 6-7 mins or until golden brown.
Step #9 Grate the zest from the lime, then squeeze the juice into a small bowl.
Step #10 Add the zest & honey & mix.
Step #11 Serve the peaches in a bowl with a scoop of vanilla ice cream & drizzle with the honey mixture.
