Fettuccine Al Marco Recipe

Ingredients
  • 1 1/2 c low fat cottage cheese .
  • 1/2 lb fettuccine .
  • black olives (optional) .
  • 2 c fresh spinach, fresh leaves .
  • 1/4 c parmesan cheese .
  • salt (to taste) .
  • pepper (to taste) .
  • 1/2 c fresh parsley, sliced .
  • 1 egg .
  • 1/2 c nonfat yogurt

Directions
  • Step #1 While the pasta is cooking, yogurt, egg, mix cheeses, salt & pepper until smooth.
  • Step #2 Add the parsley & spinach leaves.
  • Step #3 Toss the mixture with the drained, hot pasta.
  • Step #4 Garnish with black olives if desired.
