The Lady And Son's Crab-stuffed Shrimp Recipe

Ingredients
  • BASIL CREAM SAUCE .
  • 1/2 c saltine crumbs .
  • 1/2 lemon, juice of .
  • 20 large shrimp, peeled but leave the tails on (extra large or jumbo shrimp) .
  • 1 tbsp Dijon mustard .
  • 2 tbsps butter .
  • 1 egg .
  • 1/4 tsp garlic powder .
  • 1 lb crabmeat, picked for shells .
  • 1/4 c white wine .
  • 1 tbsp olive oil .
  • 1/4 c whipping cream .
  • 1/4 c mayonnaise .
  • 3 tbsps basil pesto (homemade or store-bought) .
  • 1 tsp minced garlic .
  • 12 slices bacon, halved crosswise .
  • 2 c whipping cream .
  • 1 chicken bouillon cube, crushed or 1 tsp chicken bouillon granules .
  • 1 dash cayenne pepper .
  • 1/2 c green bell peppers, finely sliced .
  • 3 tbsps minced yellow onions .
  • 2 tbsps fresh parsley, minced .
  • 1 tbsp butter .
  • 3 green onions, finely sliced

Directions
  • Step #1 FOR THE SHRIMP:.
  • Step #2 Preheat the oven to 350 degrees.
  • Step #3 Melt the butter In a large-ish skillet over med-heat/flame & sauté the green onions, green pepper, & garlic powder until the pepper is limp.
  • Step #4 Place in a mixing bowl & add the cream, mustard, & cayenne pepper.
  • Step #5 Mix well.
  • Step #6 Add the cracker crumbs, parsley, egg, mayonnaise, & lemon juice.
  • Step #7 Mix well.
  • Step #8 Gently fold in the crabmeat.
  • Step #9 Split the shrimp down the bottom center to the tail, being careful not to cut through the back.
  • Step #10 Stuff each shrimp with a small mound of the crabmeat mixture.
  • Step #11 Wrap the shrimp in bacon & secure with a toothpick.
  • Step #12 Place the shrimp on a baking sheet & cook in the top third of the oven for 15-20 mins, until the bacon is cooked through.
  • Step #13 Turn the oven to broil & broil for 4 mins to crisp the bacon.
  • Step #14 WHILE THE SHRIMP COOKS: BASIL CREAM SAUCE.
  • Step #15 Heat the butter & olive oil in a skillet over med-heat/flame.
  • Step #16 Add the garlic & onion & cook this until light brown, about 3 mins.
  • Step #17 Add the wine & reduce the sauce by half.
  • Step #18 Add the cream & bouillon & reduce by half again.
  • Step #19 Add the pesto, bring to a simmer, & heat until slightly thickened, about 2-3 mins.
  • Step #20 To serve, arrange 4 shrimp on a plate & drizzle with Basil Sauce.
