Step #2 Remove stems from Jalapenos by slicing off the ends.
Step #3 Slice Jalapenos lengthwise.
Step #4 Cover up a cookie sheet with cheese cloth, parchment paper, or foil wrap.
Step #5 You can use an outdoor smoker or food dehydrator if you want.
Step #6 Place Jalapenos skin side down (not stacked) on the pan.
Step #7 Add the peeled Garlic cloves where there is room.
Step #8 Place in oven & bake this until ALL juices have released.
Step #9 Everything should be hard & dried.
Step #10 The garlic will be brown & the Jalapenos will have shrunk drastically.
Step #11 This process can take 2-8 hrs.
Step #12 The humidity of you area, oven, & house will effect this.
Step #13 Check every 1/2 hr after a couple hrs!
When it's all done remove the pan from the oven & let cool.
Step #14 You can now process the dried ingredients in a mixer, food processor/blender, or spice grinder.
Step #15 I use a food processor/blender to condense the mixture.
Step #16 I powder the stuff from there with a coffee grinder.
Step #17 If you use a coffee grinder (the best way) make sure it's one that doesn't get used for coffee! You don't want your coffee to taste like spices & visa versa.
