Butternut Squash Soup Recipe

Ingredients
  • 2 c sliced leeks .
  • 5 tbsps butter .
  • 2 1/2 lbs squash (peeled, seeded & cut in .5-inch pieces) .
  • 5 c chicken stock or vegetable stock .
  • 1 1/4 c sliced peeled carrots .
  • 2 small granny smith apples .
  • 1/2 c whipping cream .
  • 1/2 c sliced celery .
  • 1/2 tsp dried sage .
  • 1 1/2 tsps dried thyme .
  • 1 1/2 c apple cider

Directions
  • Step #1 Melt butter in saucepan.
  • Step #2 Add squash, carrot, leeks, & celery.
  • Step #3 Sauté about 15 mins.
  • Step #4 Mix in apples, thyme, & sage.
  • Step #5 Add stock & 1 c cider; boil.
  • Step #6 Reduce heat to med-low.
  • Step #7 Cover up & let simmer about 30 mins.
  • Step #8 Cool slightly.
  • Step #9 Puree soup in mixer.
  • Step #10 Return to pan.
  • Step #11 Bring soup to simmer.
  • Step #12 Mix in whipping cream.
  • Step #13 Add 1/2 c cider if needed.
