Mashed Potato, Cheese And Chive Gratin Recipe

Ingredients
  • 8 oz cream cheese, room temperature .
  • 1/2 c whole milk .
  • 3 1/2 lbs russet potatoes .
  • 1 tbsp butter, chilled, cut into small pieces .
  • 1/2 c sour cream .
  • 1 tbsp butter, chilled .
  • 3/4 c fresh chives, sliced (about 3 bunches)

Directions
  • Step #1 Butter a 6 to 8-c ovenproof dish.
  • Step #2 Cook potatoes in large pot of boiling salted water until tender, about 12 mins.
  • Step #3 Drain potatoes; return to same pot.
  • Step #4 Add cream cheese & mash well.
  • Step #5 Mix in sour cream & milk, then chives.
  • Step #6 Spice up potatoes with salt & pepper.
  • Step #7 Spoon potatoes into prepared dish; dot with chilled butter.
  • Step #8 (Can be made 2 hrs ahead; let this stand at about room temp.
  • Step #9 ).
  • Step #10 Preheat oven to 375°F Bake potatoes until heated through & beginning to brown on top, about 30 mins.
