Thai Rice Noodles With Spicy Beef And Long Beans(for Two) Recipe

Ingredients
  • 2 tbsps sliced fresh Thai basil (25 mL) .
  • 2/3 c bean sprouts (150 mL) .
  • 2 large garlic cloves, minced .
  • 1/4 c sliced fresh coriander (50 mL) .
  • 2 tbsps soy sauce (25 mL) .
  • 3 oz long beans, cut into 1-inch (2.5 cm) .
  • 2 tbsps fish sauce .
  • 6 oz grilling top sirloin steaks, thinly sliced (180 g) .
  • 2 tsps lime juice (10 mL) .
  • 2 thai bird bell peppers, thinly sliced .
  • 1 tsp sugar (5 mL) .
  • 3 oz rice noodles (90 g) .
  • 2 tbsps vegetable oil (25 mL)

Directions
  • Step #1 In large bowl, cover noodles with boiling water & let soak for 20 mins.
  • Step #2 Drain & set aside.
  • Step #3 In wok or deep frying pan, heat oil over high heat; stir-fry garlic for 15 seconds.
  • Step #4 Add peppers; stir-fry for 5 seconds.
  • Step #5 Add beef; stir-fry until browned & still pink inside, about 2 mins.
  • Step #6 Remove to plate & keep warm.
  • Step #7 Add fish sauce & soy sauce, lime juice, 2 tbsps (25 mL) water & sugar.
  • Step #8 Add long beans; cover & cook for 3 mins or until beans are tender-crisp.
  • Step #9 Add drained noodles; stir fry until coated, about 2 mins.
  • Step #10 Return meat & bean sprouts to wok; toss to mix well.
  • Step #11 Sprinkle top with coriander & basil; toss to mix.
  • Step #12 Serves 2.
