Creamy Cheddar Cheese Soup Recipe

Ingredients
  • 3 c chicken broth
  • 1/4 c all-purpose flour
  • 3 c milk
  • 1 onion, sliced
  • 1/4 c butter
  • 1 lb shredded Cheddar cheese

Directions
  • Step #1 In a 3 quart saucepan over medium-high heat, melt butter or margarine.
  • Step #2 Add onion & cook this until tender, about 5 mins.
  • Step #3 Stir in flour & cook this until flour has mixed with onion mixture.
  • Step #4 Add chicken broth & cook, stirring constantly, until mixture is slightly thickened.
  • Step #5 Add milk & heat just to boiling, stirring constantly.
  • Step #6 In covered mixer at medium speed, mix about 1/4 of soup mixture at a time until smooth.
  • Step #7 Return to saucepan and, over med-heat/flame, heat just to boiling.
  • Step #8 Remove from heat.
  • Step #9 With wire whisk or slotted spoon, stir in the cheese until melted.
  • Step #10 If cheese does not melt completely, cook over very low heat about 1 min, stirring constantly.
