Beef Medallions W/ Saucy Shiitake Mushrooms Recipe

Ingredients
  • 4 oz shiitake mushrooms, stemmed (about 12 medium) .
  • fresh ground black pepper .
  • 1/4 tsp kosher salt, plus more for seasoning .
  • 1/4 c cognac or other brandy or madeira wine .
  • 16 oz beef tenderloin, cut into 4 medallions & patted dry .
  • 3 tbsps light sour cream .
  • 1 tbsp sliced fresh parsley leaves .
  • 1 tbsp vegetable oil .
  • 2 shallots, coarsely sliced .
  • 1 1/2 tsps vegetable oil .
  • 1 garlic clove, minced .
  • 1/4 c chicken broth

Directions
  • Step #1 Heat 1 tbsp of the oil in a medium skillet (ideally not nonstick) over medium-high heat.
  • Step #2 Spice up the beef with salt & pepper.
  • Step #3 Add the medallions to the pan & cook about 3 mins on each side, for medium-rare, or until desired doneness.
  • Step #4 Remove beef from pan & keep warm.
  • Step #5 Add the remaining 1 1/2 tsps oil to the skillet.
  • Step #6 Add the shiitakes & cook over medium-low heat, until soft, about 4 mins.
  • Step #7 Add the shallots, garlic, & salt & cook this until translucent, about 2 mins.
  • Step #8 Pull the skillet from the heat, add the Cognac, & use a wooden spoon to scrape up any brown bits that cling to the pan.
  • Step #9 Return to the heat & cook this until the liquid is reduced, about 1 min.
  • Step #10 (If you are cooking over a gas flame the alcohol may flame, simply cook this until the flames die down.
  • Step #11 ).
  • Step #12 Add the chicken broth, & cook this until saucy, about 2 mins more.
  • Step #13 Remove from the heat, stir in the the sour cream & parsley, & season this with salt & pepper.
  • Step #14 Spoon mushrooms & sauce over the medallions & serve.
