Berry Trifle Recipe

Ingredients
  • 200 g strawberries or raspberries .
  • For the trifle .
  • 6 tbsps sugar .
  • For the custard .
  • 1 tsp vanilla essence .
  • 1 swiss roll .
  • 1 liter milk .
  • 1-2 tbsp strawberry syrup or raspberry flavored syrup .
  • 60 g butter .
  • 4 tbsps cornflour .
  • 250 g ricotta cheese .
  • 2 eggs

Directions
  • Step #1 Slice the swiss roll & place this in bottom of serving bowl.
  • Step #2 Sprinkle top with berry syrup & set aside.
  • Step #3 To make custard:.
  • Step #4 Mix a little milk with conrflour to make paste.
  • Step #5 Add restf milk, sugar, vanilla.
  • Step #6 Beat egg & add to milk mixture.
  • Step #7 Add butter.
  • Step #8 Put on stove.
  • Step #9 Mix with wooden spoon constantly until butter is melted, & custard thickens.
  • Step #10 When thickening starts, ensure sides & base are constantly scraped.
  • Step #11 When custard is nice & thick, remove this from heat & leave to cool about 15-20 mins.
  • Step #12 Add ricotta cheese.
  • Step #13 Spoon custard over Swiss rolls & berry syrup.
  • Step #14 Decorate top this with berries, if desired.
  • Step #15 Chill for around 1` hr before serving.
