2 c thick coconut milk (unfortunately the light coconut milk doesn't go very well with this recipe) .
3 tbsps vinegar .
1 tsp curry powder or curry paste (mild or hot depending on your preference) .
1 stalk lemongrass, stalk lbed white part only (about 4 cm) .
2 c broccoli florets .
1/2 c julienned carrots .
2 tbsps oyster sauce .
1 tbsp canola oil .
1/4 c sliced celery .
1 medium onion, sliced .
1 tbsp peeled & julienned gingerroot
Directions
Step #1 In a large casserole over high heat, onion, sauté the ginger, garlic & lemon grass in oil.
Step #2 Add the crab, season this with salt, pepper & vinegar.
Step #3 Cover up & cook for 5 mins or until it changes colour.
Step #4 Remove crab & cut in 4 equal pieces, then pour the coconut milk, stir constantly, put it back in the casserole, then add the oyster sauce & curry powder.
Step #5 Do not cover.
Step #6 Shake the casserole every once in awhile to distribute the seasoning evenly as well as to avoid the curdling of the coconut milk.
Step #7 Let it cook for about 15-20 mins.
Step #8 Add the bell pepper, celery, carrots, & broccoli, cook for 5 mins or until crisp.
Step #9 Adjust the seasoning if necessary.
Step #10 Serve with steamed rice.
