Christmas Focaccia Recipe

Ingredients
  • 3-3 1/2 c flour .
  • 1 (1/4 oz) package dry yeast .
  • 1/2 c candied cherries (sliced) .
  • 1/3 c walnuts (sliced) .
  • 1 tsp salt .
  • 1 c warm water (120 degrees) .
  • 2 tbsps sugar .
  • 1 tbsp butter (melted) .
  • FOCACCIA .
  • 3 tbsps sugar .
  • 1/4 tsp cinnamon .
  • TOPPING .
  • 1/4 c dried currants or raisins .
  • 2 tbsps oil .
  • 1 tsp lemon peel

Directions
  • Step #1 In a large bowl mix warm water & oil.
  • Step #2 Add 1 1/2 c flour, yeast, 3 tbsps sugar, salt, lemon peel, & cinnamon; beat for 2 mins at medium speed.
  • Step #3 By hand, stir in the cherries, currants, walnuts, & 1 1/2 c flour until dough pulls cleanly away from sides of bowl.
  • Step #4 Cover up with plastic wrap & let rise in warm place till double--45-60 mins.
  • Step #5 Grease a cookie sheet.
  • Step #6 Remove dough & place on cookie sheet & with greased hands, carefully knead & stretch & press dough to form a 12" round circle.
  • Step #7 Brush with melted butter & prick several times with a fork.
  • Step #8 Cover up & let rise in warm place till light & double--about 40-50 mins.
  • Step #9 Heat oven to 400F degrees.
  • Step #10 Sprinkle top with 2 tbsps sugar & bake for 15-20 mins or till golden.
  • Step #11 Remove & place on platter or serving tray; cool for 10 min & cut into wedges.
  • Step #12 Serve warm with a nice cream cheese spread or a lemon butter spread.
