Sweet'n'spicy Pineapple Chicken Recipe

Step #1 chop the onion & garlic & set aside.
Step #2 season the chicken with the Essence seasoning liberally, & place chicken in an open roasting pan with tall sides.
Step #3 pour the pineapple juice & pineapple chunks over/inside the chicken.
Step #4 throw the onions & garlic into the pan as well (be sure to get some inside the bird too!).
Step #5 bake this at 350* for about, an hr & 45 mins, or until the juice runs clear.
