Cornbread Skillet Supper Recipe

Ingredients
  • 1/4 c bacon drippings .
  • 1 c plain cornmeal .
  • 2 c shredded cheddar cheese, divided .
  • 1 lb ground chuck .
  • 2 large eggs, lightly beaten .
  • 1 tsp salt .
  • 1 c milk .
  • 1 medium green pepper, coarsely sliced .
  • 2 medium onions, coarsely sliced .
  • 1/4 tsp pepper .
  • 1/2 tsp baking soda .
  • 1 tsp salt .
  • 1 (15 oz) can cream-style corn

Directions
  • Step #1 Preheat oven to 350°.
  • Step #2 Cook first 3 ingredients In a large-ish skillet over medium-high heat until meat is browned, stirring until it crumbles.
  • Step #3 Drain; return to skillet.
  • Step #4 Stir in 1 tsp salt & 1/4 tsp pepper.
  • Step #5 Set aside.
  • Step #6 Place a well-greased 10-inch cast-iron skillet in oven for 5 to 7 mins or until hot.
  • Step #7 Combine cornmeal & next 6 ingredients In a large-ish bowl, stirring until dry ingredients are moistened.
  • Step #8 Pour half of cornmeal mixture into hot skillet; sprinkle with 1 c cheese & all of meat mixture.
  • Step #9 Pour remaining cornmeal mixture over meat mixture; sprinkle with remaining cheese.
  • Step #10 Bake for 45 to 55 mins or until golden.
  • Step #11 Let stand 5 mins before serving.
  • Step #12 Cut into wedges to serve.
